Dhaniya Panjiri is a traditional Indian sweet made with coriander seeds (dhaniya), wheat flour, ghee (clarified butter), sugar, and nuts. Ingredients:


- 1 cup coriander seeds (dhaniya)

- 1/2 cup wheat flour (atta)

- 1/2 cup ghee (clarified butter)

- 1/2 cup powdered sugar (adjust to taste)

- 1/4 cup chopped nuts (such as almonds, cashews, or pistachios)

- 1/4 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 1-2 tablespoons milk (if using saffron)

- Edible gum (gond) - optional, for added texture and nutrition


Instructions:


1. Dry roast the coriander seeds (dhaniya) in a pan over medium heat until they turn aromatic and start to crackle. Remove from heat and allow them to cool completely.


2. Grind the roasted coriander seeds into a coarse powder using a spice grinder or mortar and pestle. Set aside.


3. In the same pan, heat ghee (clarified butter) over low-medium heat.


4. Add wheat flour (atta) to the ghee and roast it on low-medium heat, stirring continuously, until it turns golden brown and aromatic. This may take around 8-10 minutes. Be careful not to burn the flour.


5. Once the wheat flour is roasted, add the ground coriander powder to the pan and mix well.


6. Add chopped nuts (almonds, cashews, pistachios) to the pan and roast them along with the flour mixture for another 2-3 minutes, until the nuts are lightly toasted.


7. If using saffron, crush the saffron strands and soak them in 1-2 tablespoons of warm milk for a few minutes to release the flavor and color.


8. Add the saffron-infused milk (if using) to the pan, along with powdered sugar and cardamom powder. Mix everything well to combine.


9. Continue to cook the mixture for another 2-3 minutes, stirring continuously, until the sugar melts and everything is well combined.


10. Turn off the heat and transfer the Dhaniya Panjiri to a clean, dry container.


11. Allow the Panjiri to cool completely before serving or storing in an airtight container.
