Ugadi Pachadi is a traditional and symbolic dish prepared during the festival of Ugadi, which marks the Telugu and Kannada New Year in South India. Ingredients:


- 1 raw mango, peeled and grated

- 1 small piece of tamarind (approximately 1 tablespoon)

- 1/4 cup jaggery, grated

- 2 tablespoons neem flowers (optional)

- 2-3 tablespoons fresh coconut, grated

- 1 teaspoon black pepper, crushed

- 1 teaspoon mustard seeds

- 1-2 dry red chilies, broken into pieces

- A pinch of salt

- Water, as needed

- 1 tablespoon ghee (clarified butter)

- A few curry leaves (optional)


Instructions:


1. Soak the tamarind in warm water for about 10-15 minutes. Once softened, extract the tamarind pulp by squeezing it with your fingers. Strain the pulp to remove any seeds or fibers.


2. In a mixing bowl, combine the grated raw mango, tamarind pulp, and grated jaggery. Mix well until the jaggery dissolves completely.


3. Add the grated coconut, neem flowers (if using), crushed black pepper, and a pinch of salt to the bowl. Mix all the ingredients together.


4. Heat ghee in a small pan. Add mustard seeds and let them splutter. Add the broken red chilies and curry leaves (if using). Fry for a few seconds until the chilies become crisp and the curry leaves turn fragrant.


5. Pour the tempered ghee mixture over the prepared mango-jaggery mixture. Mix well to combine all the flavors.


6. Adjust the taste by adding more jaggery or salt if needed.


7. Ugadi Pachadi is now ready to be served. Transfer it to a serving bowl.


8. Serve Ugadi Pachadi as a special dish on Ugadi along with other festive delicacies.
