How to make मलाई कोफ्ते (Malai Kofta)?

 मलाई कोफ्ते (Malai Kofta) is a popular vegetarian dish from India made with dumplings made from paneer and potatoes, served in a rich, creamy tomato-based sauce. Here is a recipe for making मलाई कोफ्ते:


Ingredients For the kofta:

  • 250 grams paneer, grated

  • 2 medium potatoes, boiled and mashed

  • 1/4 cup cornflour

  • 1/4 cup finely chopped fresh coriander leaves

  • 1 teaspoon garam masala

  • Salt, to taste

  • Oil, for frying


For the sauce:

  • 2 tablespoons ghee or oil

  • 1 small onion, finely chopped

  • 1 inch ginger, finely grated

  • 3 cloves garlic, finely grated

  • 1 green chili, finely chopped

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander seeds

  • 1 teaspoon garam masala

  • 1 teaspoon red chili powder

  • 2 cups tomato puree

  • 1 cup heavy cream

  • Salt, to taste


Instructions:

  1. To make the kofta, mix together the grated paneer, mashed potatoes, cornflour, coriander leaves, garam masala, and salt in a bowl. Divide the mixture into small balls and roll them between your palms to form smooth kofta.

  1. Heat the oil in a pan over medium heat. Add the kofta to the pan in batches and fry them until they are golden brown on all sides. Remove the kofta from the pan and set them aside.

  2. To make the sauce, heat the ghee or oil in a separate pan over medium heat. Add the onion, ginger, garlic, green chili, cumin seeds, coriander seeds, garam masala, and red chili powder to the pan and sauté until the onions are soft and fragrant.

  3. Add the tomato puree and heavy cream to the pan and stir to combine. Reduce the heat to low and simmer the sauce for 10-15 minutes, or until it has thickened and the flavors have melded together.

  4. Add the fried kofta to the sauce and stir gently to coat them evenly with the sauce.

  5. Serve the kofta hot, garnished with fresh coriander leaves, with rice or roti on the side. Enjoy!
