Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1 large egg
2 tablespoons butter, melted
Vegetable oil, for cooking
Instructions:
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, beat together the milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.
Heat a large skillet or griddle over medium heat. Add a little oil to the pan and use a paper towel to spread it evenly.
Pour about 1/4 cup of batter onto the pan for each pancake.
Cook the pancakes for 1-2 minutes, or until bubbles form on the surface and the edges start to look dry. Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown on both sides.
